Hayden Quinn, Oven Tsukune Chicken Meatballs Recipe



Usually served in yakitori restaurants, Tsukune is a skewered Japanese chicken meatballs grilled on charcoal. It is easier to do than it seems.

  • 500g lilydale free chicken minced meat
  • finely grated zest of 1 lime
  • 4 onions finely chopped
  • 3cm piece of ginger finely grated

  • 1 1 2 cup bread crumbs
  • 2 tsp sesame oil

  • 3 onions sliced on the angle
  • 1 tablespoon white sesame seeds
  • 1 lime cut into quarters
  • 2 cup sushi rice cooked

  • preheat the oven to 180c to make meatballs mix all ingredients in a large bowl mix everything well and ensure that all the ingredients are well distributed add more breadcrumbs if you feel like you have the need just make sure you do not over work the mixture with wet hands shape into about 14 balls and place on oven tray
  • make basting sauce by combining soy sauce and mirin mix well and brush over meatballs bake in the oven for 20 minutes basting with the sauce every 5 minutes until dark and golden
  • serving as a cooking plate scattered with spring onion sesame seeds lime and rice
