Carrot Cranberry Loaf

The ingredient of Carrot Cranberry Loaf

  • 2 cups 300g self raising flour
  • 1 1 2 cups carrot coarsely grated
  • 1 cup 220g brown sugar
  • 1 2 cup 65g dried cranberries
  • 1 teaspoon ground cinnamon
  • 2 lightly whisked coles brand australian free range eggs
  • 1 2 cup 125ml milk
  • 1 2 cup 125ml vegetable oil
  • 2 tablespoons pepitas pumpkin seeds

The Instruction of carrot cranberry loaf

  • preheat oven to 180c grease and line a coles cook dine loaf pan allowing 2 long sides to overhang
  • combine self raising flour grated carrot brown sugar dried cranberries and 1 teaspoon ground cinnamon in a large bowl
  • add 2 lightly whisked eggs milk and vegetable oil stir to combine pour into the prepared pan and sprinkle with 2 tablespoons pepitas pumpkin seeds
  • bake for 1 hour or until a skewer inserted in the centre comes out clean serve the loaf warm or cool and wrap see image
