- 2 cups 300g self raising flour
- 1 1 2 cups carrot coarsely grated
- 1 cup 220g brown sugar
- 1 2 cup 65g dried cranberries
- 1 teaspoon ground cinnamon
- 2 lightly whisked coles brand australian free range eggs
- 1 2 cup 125ml milk
- 1 2 cup 125ml vegetable oil
- 2 tablespoons pepitas pumpkin seeds
The Instruction of carrot cranberry loaf
- preheat oven to 180c grease and line a coles cook dine loaf pan allowing 2 long sides to overhang
- combine self raising flour grated carrot brown sugar dried cranberries and 1 teaspoon ground cinnamon in a large bowl
- add 2 lightly whisked eggs milk and vegetable oil stir to combine pour into the prepared pan and sprinkle with 2 tablespoons pepitas pumpkin seeds
- bake for 1 hour or until a skewer inserted in the centre comes out clean serve the loaf warm or cool and wrap see image
