- 1 4 cup 60ml extra virgin olive oil
- 2 garlic cloves cut into small matchsticks
- 4 thyme sprigs cut into small sprigs
- 2 garlic bulbs halved crossways
- 3 thyme sprigs extra to serve
- mashed potato to serve
- steamed vegetables to serve
The Instruction of thyme and garlic roast lamb
- preheat oven to 180c grease a large baking dish
- use a small knife to make cuts all over lamb rub oil over lamb season well place a garlic matchstick and a small thyme sprig in each cut place the lamb halved garlic and extra thyme in a baking dish roast for 2 hours for medium or until cooked to your liking set aside covered for 15 mins to rest
- serve the lamb with mashed potato and steamed vegetables
